Pork Adobo with Ampalaya

Ingredients :

  • 2 lb. pork, cut into serving pieces
  • 5 cloves garlic, crushed
  • 1 cup vinegar
  • 2 tbsp. oil
  • salt and pepper, to taste
  • ampalaya (bitter melon; bitter gourd), sliced
(Metric Conversion Cooking)

Cooking Procedures :

  1. In a pot, place the pork, vinegar, crushed garlic, oil, salt and pepper.
  2. Bring to a boil then simmer until the pork is tender.
  3. Add the sliced ampalaya and stir just to combine. Cook for 3 to 5 minutes.
  4. Remove from heat. Serve hot with rice.
